Ground turkey and hash browns with an onion, poblano pepper, and red pepper mixture baked into an egg casserole. Serve over a bed of spinach if you prefer some extra vegetables.

Ingredients
•1 lb of ground turkey
•10 eggs
•1⁄4 cup milk
•2 cups shredded hash browns
•1⁄2 sweet onion
•1 poblano pepper (green pepper works)
•1 red pepper
•1⁄2 cup shredded cheese
•2 Tbsp olive oil
•Salt and pepper to taste
•2 1⁄2 cups spinach (optional)
•Cooking spray
Preparation
•Preheat your oven to 375°F.
•Wash your peppers and chop the peppers and onion into a small dice.
•Heat 1 Tbsp of olive oil over medium high heat in a large skillet. Add in the peppers and onions and cook for 2-3 minutes.
•Add in the ground turkey and brown.
•While the turkey is cooking, beat 10 eggs and 1⁄4 cup of milk together. Stir in 2 cups of shredded hash browns, 1 tsp salt, 1 tsp pepper, and 1⁄2 cup of shredded cheese.
•Once the turkey has finished cooking, mix it into the egg/hash brown mixture.
•Lightly spray a 13”x9” baking dish with cooking spray and pour in the egg mixture. Bake for 20-22 minutes or until the center has set.
This recipe makes 5 servings. Cut the Egg Bake into 5 equal servings. If you wish, add 1⁄2 cup of raw spinach to the bottom of each of your containers and top with the egg bake. The spinach will cook in the microwave upon reheating.
